Place Pigalle—an iconic landmark in Paris’s 9th arrondissement and a neighborhood undergoing transformation since the 2000s—was the setting for this ambitious project. A private family-owned group aimed to revive the classic Parisian bouillon, a traditional, affordable eatery, reimagined through a contemporary lifestyle and design lens.

The building’s exterior was entirely redesigned, featuring new dark-wood facades and the addition of a covered terrace on the first floor. This elevated space offers panoramic views of the bustling Place Pigalle beneath deep, sculpted arches, lending a raw yet modern aesthetic. Decorative wrought-iron balconies with planters add charm and rhythm to the restaurant’s façade.

Inside, the restaurant’s expansive volumes are accentuated by custom lighting fixtures designed by DODA.A . Along the edge of the dining room, large picture windows frame high counter seating,
allowing diners to observe the constant activity outside.

Communal wooden tables and custom leather-upholstered banquettes fill the two dining halls, evoking a timeless, convivial atmosphere. Ceramic tile walls, columns wrapped in poster art echoing the restaurant’s color palette, and signage announcing menus and events complete the look.

At the rear, DODA.A designed a professional kitchen able to handle up to 1,000 meals per day— ensuring the Bouillon lives up to its promise of high performance and mass appeal. Bouillon Pigalle is a bold blend of culinary tradition and timeless architecture—popular, efficient, and successful—breathing new life into the Parisian bouillon tradition.
